BEANS

Beans are a crucial staple to many cultures outside the U.S, and should probably get a little more credit than being a “magical fruit”. Beans have a longstanding history as a key ingredient to the diets of early civilizations.

The bean is one of the earliest cultivated crops recorded in history. It first originated in early Mesoamerica and eventually spread to Ecuador, Columbia, and then the Andes. Today, in the United States, most beans are grown in Michigan and North Dakota.

Beans are like wine. The many varieties of bean are categorized as Old World (fava) and New World–which includes varieties like pinto, black, and navy. Not only are they a staple to many cultures and communities, but they are an important source of protein for many plant-based, vegan, or vegetarian diets. Being rich in antioxidants, fiber, and other vitamins makes it a true superfood. Beans are also low in fat and are known to lower cholesterol making them a healthy option for any time of day.

FUN FACTS

Beans for breakfast.

No joke. Beans can be a great breakfast food if you’re in for a long, busy day. Why? They will help set the tone for the day and stabilize your blood sugar. Beans help you make sure you start your mornings off right.

They don’t have to make you gassy

Beans get a bad rap for the after effects they can cause for some digestive systems. Luckily, there’s a way around that. Beans make some people gassy due to the sugars in them called “oligosaccharides”. If you soak your beans longer, even overnight, you’ll remove some of the sugars and experience fewer digestive issues.

Beans are green

Well yeah, literally sometimes. But they’re also sustainable and great for the environment. Beans themselves are great for soil providing enrichment and even a form of cover for strong wind and rain.
